It's hardly to find any new Linux filesystem against partition directly. The most popular one is building "partition" on top of LVM (stands for Logical Volume Manager).
http://tldp.org/HOWTO/LVM-HOWTO/
You might not be able to sense the benefit of using LVM if you don't have a RAID for your server/desktop though.
RHEL/CentOS will introduce the default LVM based partition schema by default if you don't customize it by your own.
As for the partition recommendation, please take the reference from Redhat site:
https://access.redhat.com/documentation/en-US/Red_Hat_Enterprise_Linux/6/html/Installation_Guide/s2-diskpartrecommend-x86.html
You will have to give up those windows habits and get used to linux if you are seriously considering switching to a new platform. The idea of putting important data on its own physical partition works for Linux as well. But you will lose the benefit you could get from more advanced setup, such as LVM. Remember what I said above, if you don't have a RAID, you may not be able to see the benefits...
If you plan to use linux for entertainment, please cancel it. Linux is not built for that purpose. In fact, I don't recommend any regular user for a Linux GUI system. If you like to try something different than Windows, go for Mac. Movies data are something I haven't heard for a long time on my Linux servers...
